Cranberry orange waffles with maple syrup

Ingredients

  • 45 g oat flour
  • 40 g coconut flour
  • 190 g spelt flour or gluten-free flour
  • ½ tsp baking soda or sodium bicarbonate
  • 1½ tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 1 tsp orange zest
  • 360 ml milk of choice
  • 2 tsp apple cider vinegar
  • 1 tbsp orange juice
  • 40 g melted butter or margarine
  • ½ tsp vanilla extract
  • 2 tbsp maple syrup
  • 50 g frozen or fresh cranberries

For the cranberry jam:

  • 120 ml agave or maple syrup
  • 25 g fresh or frozen cranberries
  • 1 tsp orange zest

Preparation

 

  1. Use a whisk to mix the milk and apple cider vinegar and let it rest for at least 3 minutes. This produces a kind of vegetarian buttermilk.
  2. In a large bowl, combine the oat flour, coconut flour, spelt flour, baking soda, baking powder, cinnamon, salt and orange zest.
  3. In a smaller bowl, combine the buttermilk and orange juice, melted butter, maple syrup and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix well.
  5. Finally, stir in the cranberries.
  6. Bake the waffles in a hot waffle iron for around 3 minutes.
  7. Prepare the cranberry jam while the waffles are baking.
  8. Combine all ingredients in a saucepan and bring to a boil until the cranberries start to pop. Turn off the heat and allow to cool.
  9. Serve the jam with the waffles.
