Ingredients
- 800 g floury potatoes
- 6 leeks, white parts only
- Olive oil
- Skimmed milk or butter
- Season to taste with pepper, salt and nutmeg
Preparation
- Cut the leek whites up and braise them with some olive oil.
- Peel and cook the potatoes.
- Mash the potatoes, adding a dash of skimmed milk or a pat of butter.
- Mix the leek into the purée.
- Season the purée to taste with pepper, salt and nutmeg.
