Purée of leek

Ingredients

  • 800 g floury potatoes
  • 6 leeks, white parts only
  • Olive oil
  • Skimmed milk or butter
  • Season to taste with pepper, salt and nutmeg

Preparation

  1. Cut the leek whites up and braise them with some olive oil.
  2. Peel and cook the potatoes.
  3. Mash the potatoes, adding a dash of skimmed milk or a pat of butter.
  4. Mix the leek into the purée.
  5. Season the purée to taste with pepper, salt and nutmeg.
