Endive purée

Ingredients 

  • 1 kg floury potatoes
  • 1 kg endive
  • 6 tbsp pearl onions
  • Skimmed milk or butter
  • Season to taste with pepper, salt and nutmeg

Preparation

  1. Peel and cook the potatoes.
  2. Cut the endive finely and cook it in some water.
  3. Mash the potatoes and add a dash of skimmed milk or a pat of butter for extra creaminess.
  4. Stir the finely cut endive and pearl onions into the purée.
  5. Season to taste with pepper, salt and nutmeg.
