DOMO cauliflower-pepper soup soup maker

Time: 20-30 min.

Setting DOMO Soup maker:

  • Program: Extra smooth

Ingredients

  • 1 small cauliflower
  • 3 peppers
  • 1 large onion
  • 3 garlic cloves
  • 60 g cashew nuts
  • 1 l water
  • 2 vegetable stock cubes
  • 3 tbsp white miso
  • 0,5 tsp cumin
  • salt and pepper
  • olive oil
  • toppings: roasted cashew nuts and herbs

Preparation

 

  1. Cut the cauliflower into florets and the peppers into strips.
  2. Grease them with some olive oil and place on a baking tray lined with baking paper.
  3. Place the tray in a preheated oven at 175°C for 30 min.
  4. Dice the onion and place in an ovenproof bowl with the garlic cloves, add some olive oil and place the bowl in the oven for the last 10-15 minutes.
  5. Then place the roasted vegetables, the onion, garlic and all other ingredients (except the topping) in the soup maker.
  6. Select the ‘Extra smooth’ programme.
  7. Serve the soup with roasted cashews and fresh herbs.
