Avocado dressing

Time: 10-15 min.


Ingredients

  • 1 ripe avocado
  • 1 clove garlic
  • 1 shallot
  • 1 tbsp lemon juice
  • 2 tbsp finely chopped parsley
  • 4 tbsp olive oil
  • 150 g yogurt
  • Salt and pepper

Preparation

 

  1. Chop the shallot.
  2. Open the avocado, remove the pit and slice into pieces.
  3. Combine all ingredients in a blender and blend until smooth.

Tip: great with chicken, pasta or as a dip for raw veggies.
