Ingredients

  • 125 g coconut oil
  • 200 g bitter chocolate
  • 2 whole eggs and 2 egg yolks
  • 60 g coconut blossom sugar
  • 20 g spelt flour
  • pinch of salt

Preparation

  1. Preheat the oven to 210 °C.
  2. Grease the moulds with a bit of coconut oil.
  3. Melt the chocolate and coconut oil together au bain-marie.
  4. Beat the eggs and the egg yolks together with the coconut blossom sugar. 
  5. Gradually add the chocolate and the sifted spelt flour with a pinch of salt.
  6. Fill the moulds and refrigerate to cool and harden. 
  7. Bake the moelleux 10 - 13 minutes, depending on the size. The moelleux should still be somewhat fluid inside.
  8. Serve hot with a scoop of ice cream or cooked pears.
