Mushroom Purée

Ingredients 

  • 1 kg floury potatoes
  • 350 g mushrooms
  • 1 clove finely diced garlic
  • 150 g finely diced chives
  • Skimmed milk or a pat of butter
  • Olive oil
  • Season to taste with pepper, salt and nutmeg

Preparation 

  1. Peel and cook the potatoes.
  2. Quarter the mushrooms and braise them briefly with olive oil and the garlic.
  3. Mash the potatoes and add a dash of skimmed milk or a pat of butter to make them creamy.
  4. Mix the mushrooms into the purée, together with the chives.
  5. Season the purée to taste with pepper, salt and nutmeg.
