Parsnip purée

Ingredients 

  • 1 kg floury potatoes
  • 1 kg parsnip
  • 4 cloves diced garlic
  • 100 g rocket lettuce
  • Skimmed milk or butter
  • Season to taste with pepper, salt, nutmeg and thyme

Preparation 

  1. Peel the potatoes and the parsnip.
  2. Cut them into pieces.
  3. Cook the potatoes and the parsnip together with the garlic.
  4. Mash the potatoes together with the parsnip and garlic.
  5. To make the purée creamy, add a dash of skimmed milk or a pat of butter.
  6. Finish off with rocket lettuce and season to taste with pepper, salt, nutmeg and thyme.
