Tomato soup with pesto in the soup maker

Appliance: DOMO Soup maker

  • Programme: Smooth

Ingredients

  • 500 g tomatoes (well ripe or canned)
  • 1 onion
  • A clove of garlic
  • 1 cube of vegetable stock
  • 1 tbsp tomato puree
  • 500 ml water 
  • Pepper and salt
  • Cream
  • Pesto (preferably from the fresh section or homemade)
  • Fresh basil

Preparation

 

  1. Peel and chop the onion and garlic. 
  2. If using fresh tomatoes, peel them, remove the hard crown and cut them into pieces.
  3. Put the onion, garlic and tomato in the soup maker along with the stock cube and tomato puree. Pour over with 500ml of water.
  4. Season with salt and pepper.
  5. Select the smooth soup programme and press start.
  6. Taste the soup when it is ready and season with salt and pepper if necessary.
  7. Divide the soup between bowls and top with some pesto, some cream and a few basil leaves.
