Ingredients
- 500 g tomatoes (well ripe or canned)
- 1 onion
- A clove of garlic
- 1 cube of vegetable stock
- 1 tbsp tomato puree
- 500 ml water
- Pepper and salt
- Cream
- Pesto (preferably from the fresh section or homemade)
- Fresh basil
Preparation
- Peel and chop the onion and garlic.
- If using fresh tomatoes, peel them, remove the hard crown and cut them into pieces.
- Put the onion, garlic and tomato in the soup maker along with the stock cube and tomato puree. Pour over with 500ml of water.
- Season with salt and pepper.
- Select the smooth soup programme and press start.
- Taste the soup when it is ready and season with salt and pepper if necessary.
- Divide the soup between bowls and top with some pesto, some cream and a few basil leaves.
